Basic Homemade Granola Recipe

Ingredients
- 3 cups rolled oats (old-fashioned, not instant)
- 1 cup mixed nuts (almonds, pecans, walnuts — roughly chopped)
- ¼ cup seeds (pumpkin seeds, sunflower seeds, or sesame seeds)
- ¼ cup honey or maple syrup
- 3 tablespoons coconut oil or neutral cooking oil
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- Pinch of salt
Optional Add-Ins (after baking)
- ½ cup dried fruit (raisins, cranberries, apricots, dates)
- ½ cup dark chocolate chips or chunks
- ¼ cup shredded coconut (toasted separately)
Instructions
- Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper.
- Mix the wet ingredients. In a small bowl, whisk together the honey (or maple syrup), melted coconut oil, vanilla extract, cinnamon, and salt.
- Combine with the dry ingredients. In a large mixing bowl, toss the oats, nuts, and seeds together. Pour the wet mixture over them and stir well until everything is evenly coated.
- Spread and bake. Spread the mixture in a single, even layer on the prepared baking sheet. Bake for 20–25 minutes, stirring once halfway through, until golden brown.
- Cool completely. Remove from the oven and let cool on the pan without stirring — this is what creates those satisfying clusters. The granola will crisp up as it cools.
- Add your mix-ins. Once fully cool, stir in dried fruit, chocolate chips, or coconut if using.
- Store. Transfer to an airtight container. Granola keeps well at room temperature for up to 3 weeks.
Tips for Perfect Granola Every Time
- Don't over-stir while baking. Stirring once in the middle is enough — too much stirring prevents cluster formation.
- Watch closely in the last 5 minutes. Granola can go from golden to burnt quickly. Ovens vary, so start checking at the 18-minute mark.
- Use parchment paper. It prevents sticking and makes cleanup effortless.
- Add chocolate after cooling. Adding chocolate chips while the granola is still hot will melt them completely — add them once it reaches room temperature.
